What makes Pacamara different?
Pacamara originated in El Salvador from a cross between Pacas and Maragogipe. Its large beans and distinctive genetic background have made it a recognized variety in specialty coffee. Its cup profile, however, depends on more than variety alone: growing conditions, harvest quality, processing and roasting all contribute to the final result.
This Colombian lot showcases one expression of Pacamara through its complex fruit-forward character, lively acidity and cacao notes.
How to Enjoy Your Pacamara
Pour-over. For the full fruit experience
This is where we recommend starting. Use freshly boiled water that has cooled slightly (192°F), a medium-coarse grind, and a ratio of 16:1 (about 15 g of coffee to 250 g of water). Wet all the grounds with a small initial pour, wait 30–45 seconds, then slowly pour the remaining water in gentle circles. Aim for a total brew time of around 3 minutes.
Look for intense cherry and raspberry aromas, natural sweetness, and a bright, refreshing finish. Let the cup cool a little as you drink; the fruit can become even more expressive.
Espresso. For a concentrated fruit experience
Use a fine grind and start with 18 g of coffee in, aiming for about 40 g of espresso out in 28–35 seconds. Adjust your grind to find a balanced extraction.
Expect a more concentrated expression of the coffee's red-fruit character, with vivid aromatics and sweetness. Enjoy it straight first, before adding milk, to experience what makes this coffee distinctive.
